I always lament the passing of peaches, plums, and pluots from the farmers markets. But it's a little easier to take with the bushel of heirloom apples that take their place. You forget how good a simple apple can taste if all you're used to is run-of-the-mill supermarket ones. Do yourself a favor and explore some of the lesser known varieties found at your local farmers' markets. You'll be amazed at the intense flavors you'll discover.

I bought some apples from our local farmers market last month, made up some apple pie filling, then put it in the freezer. I can't wait to put it in a triple crust pie. And with vanilla ice cream there's nothing better!
